    Episode Description

    Antojitos Minis means “little cravings”. It is typically sold as Mexican street food to be eaten as a snack. If you serve Mini Antojitos as an appetizer, be prepared for them to literally fly off the plate. What’s even better – they can be made ahead of time, frozen, and reheated. INGREDIENTS 4 (12 inch) flour tortillas 3 ounces shredded white Cheddar cheese 3 ounces shredded which Monterey Jack cheese 3 ounces shredded Cheddar cheese 1 tomato, diced 1 cup chopped red bell pepper 1/8 cup chopped red bell pepper 1/3 cup black beans, drained 2 tablespoons hot salsa 1/8 teaspoon chili powder - Lightly grease 2 muffin tins - Cut flour tortillas into 6 smaller tortillas - Place in muffin tin cups - Add shredded white cheddar Cheese to each one - Add shredded Monterey Jack cheese to each one - Add shredded Cheddar cheese to each one - Add tomato bits to each one - Add red bell peppers bits to each one - Add green onions to each one - Add black beans to each one - Add chili powder to each one - Add hot salsa to each one - Bake for 5 minutes
